I'm hosted here, with a domain I got elsewhere. People I got the domain from claim that if they don't host me, they can't change the Mail Exchange entries for me. Should I do it here?

You can definitely change your MX settings for your domain form the cPanel of your Hosting account in Astahost. You can find the options to change under the Mail Options in cPanel.
